02/6​Spinach Pulao

If you are fond of pulao, then you need to try this delicious variant of pulao. All you need to do is cook the pulao as you usually do. Now make a spinach puree and cook it separately until the rawness goes away. Mix this spinach puree with the cooked pulao and serve with some raita. Bathua is another green-leafy vegetable that looks very similar to spinach in appearance. Also called pigweed, bathua has arrow-shaped leaves and carries tons of benefits. Bathua is rich in fibre which will keep your bowel movement smooth. This green-leafy vegetable acts as a natural blood purifier and will keep your skin clear and glowing. To prepare Bathua raita, first, wash the bathua leaves properly and then boil them. Squeeze out all the excess water and add the leaves to a large bowl. Pesto sauce can be used to make pasta sauce, spread on a sandwich and can even be used as a healthy dip. All you need to do is grind fresh basil, pine nuts, parmesan cheese, garlic, olive oil, green chillies, lemon juice, salt and pepper together. Arbi ke Patte are super nutritious but aren’t known much when it comes to their use in cooking. Arbi ke Patte are widely used to make pakore which makes the perfect snack for monsoons. They are beneficial for diabetes patients as they help in keeping sugar under control. Also called Taro leaves, Arbi ke Patte also improve vision and promote heart health. All you need to do is make a batter using besan, ajwain, salt, red chilli powder, coriander powder and ginger-garlic paste. Now spread this batter on a taro leaf and place another leaf on top of it. Who doesn’t love a dollop of mint coriander chutney on the side while eating a sumptuous meal? You can easily make this chutney by blending a bunch of coriander leaves, mint leaves, onion, ginger, garlic, lemon juice, salt and green chillies.
